I had an extremely delicious green bar from Naked Naturals in Parksville earlier this summer. In full disclosure, my cousins own the health food store, but I don’t think that changes how divine this treat tasted. I’ve been thinking, even dreaming, about it ever since. This was my first attempt and I wanted it jam-packed with superfoods like goji berries and chlorella. This bar is a healthy indulgence that will provide you with a concentrated amount of nutrients so you can feel good about enjoying this treat. 

Benefits:

  • Chlorella is a freshwater green algae loaded with chlorophyll and a wide range of vitamins and minerals, including vitamin A, C, B12, and iron. Chlorella is consumed to cleanse the body. It chelates/removes toxins and heavy metals while protecting major filtration organs like the liver. It is used as a preventative measure against cancer, reduces side effects of radiation, improves your immune system by stimulating white blood cell production, regulates blood pressure, and balances hormones among many other wonderful things. 
  • Goji berries are another popular superfood that contain amazing amounts of vitamin A and antioxidants that help protect against free radical damage and fight inflammation. Vitamin A is especially beneficial for eye health, which assists in preserving and enhancing sight. Goji berries are also a good source of iron and protein. 
  • The binder of this bar is coconut. Coconut butter is made from dehydrated coconut meat, which is loaded with great fat. Coconuts contain saturated fats, but most of these are medium chain fatty acids (MCTs), not the scary long chain ones we often hear about. MCTs are broken down much faster than long chain fatty acids, so their energy is available right away and doesn’t need to be stored. This means they do not contribute to high cholesterol and cardiovascular disease.

Green Seedy Bar Ingredients:

1/2 cup coconut butter

1/2 cup coconut oil

1/4 cup maple syrup or honey

2 tablespoons chia seeds

1 tablespoon chlorella

1 teaspoon vanilla bean powder

1/2 cup assorted raw seeds (sesame, sunflower, pumpkin, flax, etc.)

2 tablespoons goji berries

sea salt

hemp seeds

Directions:

In a pot, combine coconut butter and oil over low heat until melted. Add maple syrup, chia seeds, chlorella, and vanilla bean powder and mix well. Remove from heat and let stand for 15 minutes. 

Line a loaf pan with non-bleached parchment paper and set aside. 

Toss seeds, goji berries, and a sprinkle of sea salt in a separate bowl. Combine with the melted mixture before pouring into the lined pan. Sprinkle with hemp seeds. Refrigerate for 1 hour or until hardened (or freeze for longer storage). Cut into rectangles before serving.
