Local fruits are only around for a short while so I try to enjoy them as much as I can during the summer months. Last week, I bought a flat of fresh raspberries and decided to put on a new spin on an old dessert. I switched some of the portions to keep the mixture dry enough to mold into balls, but the raspberries were a delicious addition. Feel free to use any nut butter, but the macadamia comes highly recommended.

- I’m crazy for cacao. I put it in desserts, smoothies, chia pudding, and even oatmeal if I’m feeling frisky. Raw cacao is a superfood that really gets me going. It contains a compound called phenylethylamine (PEA), which elevates mood and makes me feel like a rockstar. PEA is the same chemical the body naturally produces when you’re in love. Cacao is a rich source of antioxidants and minerals such as copper, iron, zinc, phosphorus, calcium, and potassium. Cacao is especially rich in magnesium, which relaxes nerves and muscles, balances brain function, strengthens bones, and eases depression. However, be cautious consuming cacao close to bedtime as it can be extremely stimulating!
Raspberry Coconut Cacao Bites Ingredients:
1/2 cup rolled oats
1/2 cup macadamia or cashew butter
1/2 cup shredded coconut, unsweetened & unsulphured
1/4 cup raspberries, fresh
2 tablespoons cacao powder
2 tablespoons cacao nibs
2 tablespoons honey
1 teaspoon vanilla
Directions:
Combine all the ingredients in a medium bowl and mix well. Shape into small, bite-size balls using your hands. Store in refrigerator/freezer. Thaw 10-15 minutes at room temperature before serving.
Makes 25-30 Balls
