I wasn’t sure what to bring when I was invited to a summer solstice potluck. However, I knew I wanted to prepare a dish that was refreshing and wouldn’t add more heat to the long day we were celebrating. I went to my herb patch to grab some mint and started to brainstorm other cooling foods to complement. It didn’t take long to put together this simple salad that’s easy to prepare, energizing, and exactly what my body was craving. 

Benefits:

  • You may be familiar with putting cucumbers on your eyes to soothe the surrounding tissue and reduce puffiness. This is because cucumbers contain compounds, such a caffeic acid, that promotes skin healing. Cucumbers are also an amazing source of vitamins A, C, and E, which help reduce inflammation and are the core antioxidant vitamins. These nutrients protect cells from free radical damage and promote stronger immune function. They work together to rebuild and protect tissue while fighting off infection. 
  • Mint is a great source of vitamin A and C too. Furthermore, mint is classified as a carminative herb, which relieves tissue tension and promotes relaxation of the smooth muscle of the digestive tract. Carminative herbs reduce indigestion (bloating, belching, nausea, or heartburn) and colic by promoting gas explosion. 
  • Limes contain unique flavonoids that act as powerful cell-protectors in the body. Accompanied with high levels of vitamin C, limes offer an amazing variety of antioxidants that work together to create a stronger defense team to protect against damaged caused by pollution, chemical additives, hydrogenated fats, and dangerous lifestyle habits.

Cucumber Mint Citrus Salad Ingredients:

2 medium cucumbers, sliced & quartered (approx. 4 cups)

8 radishes, halved & sliced

1/2 cup raw pistachios, roughly chopped

4 green onions, thinly sliced

2-3 tablespoons fresh mint, finely chopped

Directions:

In a large bowl, combine all ingredients and set aside. 


Lime Cider Dressing Ingredients:

1/2 teaspoon lime zest

2 tablespoons lime juice

2 tablespoons olive oil

1 tablespoon apple cider vinegar

sea salt & fresh pepper

Directions:

Whisk zest, juice, oil, and vinegar together. Toss with salad and season to taste with salt and pepper.
