This breakfast dish is a digestion reset. After a weekend of indulgences, this can often be the Monday morning meal that can put you back on track. It’s loaded with soluble and insoluble fibre, über amounts of phytonutrients, and satiating healthy fats from nuts and seeds. The servings are large and there’s plenty of chewing involved. This dish is a great way to wake up your tastebuds and body! 

Benefits:

  • Carrots are loaded with alpha- and beta-carotene carotenoids, which are converted into the antioxidant vitamin A in the body. Vitamin A is great for boosting immune function and promoting vision and healthy lungs. However, it’s not just the vitamin A in carrots that makes them so wonderful. They contain an array of phytonutrients and compounds that work together synergistically in the body when the whole carrot is consumed.
  • An apple a day may really keep the doctor away. Apples are loaded with fibre, vitamins and minerals, and phytonutrients, which have been shown to improve lung and brain function, inhibit cancer growth, lower cholesterol, boost metabolism, regulate blood glucose, increase energy, and promote healthy gut flora! Now that’s an impressive superfood. 
  • Oh, the holy cabbage. Not only is this cruciferous veggie amazing for detoxification, but cabbage is also high in the fibre required to remove those bodily toxins from the colon after they’re excreted from the liver. Cabbage is an all-star vegetable for cancer prevention and a fantastic food to be consuming during and post-treatment too! 

Breakfast Slaw Ingredients:

1 cup grated carrot

1 cup grated apple

1 cup shredded cabbage

1/2 cup brazil nuts, chopped

Juice & zest of 1 orange

1/2 teaspoon vanilla

1/4 cup hemp seeds

1 tablespoon pumpkin seeds

Directions:

Toss the carrots, apples, cabbage, and brazil nuts in a large bowl. In a separate bowl, whisk orange juice, zest, and vanilla. Pour dressing over slaw mixture, add hemp seeds, and combine well. Sprinkle with pumpkin seeds before serving.
